Microgreens

We recently dove head-first into a long-term goal of growing and selling microgreens. Many people haven't heard of them and don't know what to do with them.


So, what are microgreens anyways?


Summed up, they are young plants similar to sprouts but, unlike sprouts which are grown in water, they are grown in soil. They are also a bit more mature. They're super nutrient-dense, more so than their adult plant counterparts, and are really flavorful.


Ok, so how do we use microgreens?


We've been experimenting with them for a couple of weeks and have found a variety of ways to use them and are constantly finding more. Since they are so nutrient-dense (and we have them), I've been trying to sneak them into as many things as I can. Here are some of the things we've done with them.....


-Mixed into a salad (the steak salad was so good)

-Wraps (they were really yummy in our tuna wraps)

-Pita sandwiches (today we had homemade hummus with cheddar cheese and microgreens. I think this is a favorite)

-Mixed into a pasta dish

-On loaded baked potatoes

-Chopped up and added to our bacon, cabbage, and egg noddles that we all LOVE


In the future, I plan to sneak them into.......


-Egg roll bowls

-Pasta salad

-Salmon bowls

-Soups

-Quiche/frittata

-Maybe some bread

-Whatever I think I can get away with


Like with a lot of vegetables, cooking them can lessen their nutritional content.
